2005 Cuvée Laurence Châteauneuf-du-Pape
Domaine du Pegau is an estate bottler of Châteauneuf-du-Pape, owned by Paul Féraud and his daughter Laurence. Recognized as one of the top estates in Châteauneuf, its wines are considered among the world's greatest. Though supply is far outweighed by demand, prices remain reasonable for those able to seek out and purchase these wines.
Tasting Notes: Crème de cassis, exotic spices and tobacco and leather aromas on the nose. Medium to full-bodied on the palate, with a long, lingering finish.
Serve With: Excellent with strong cheeses and grilled/roasted meats.

46 acres Red Châteauneuf-du-Pape (39 acres Grenache, 4 Syrah, 2 Mourvèdre, 1 acre old mixed plantings of other authorized varietals including Counoise, Cinsault, Vaccarèse). 2.5 acres White Châteauneuf-du-Pape (1.5 acres Grenache Blanc, .5 Clairette, .25 Bourboulenc, .25 acres Roussanne).

Viticulture
Vines average 60+ years in age! Yields of 2 tons/acre.
Vinification
Whole grape bunches were lightly crushed and fermented with wild yeasts for 5-7 days in traditional cement vats. This was followed by a further maceration period of 7-14 days, with1-2 pump-overs per day. The ‘Cuvée Laurence'
undergoes an extended aging period of 3-4 years in a combination of small barrels and large old oak foudres.
