Miquel Pons wines are produced from traditional grape varieties in La Granada del Penedès, the heart of Cava country, some 25 miles south of Barcelona. The Pons family has been growing vines in this area for generations, with Miquel and his sons Joan and Pere continuing a proud legacy of quality with their outstanding cavas.
Tasting Notes: Fresh, dry and well-balanced, with plenty of fruit, a pleasant yeasty character and a creamy bubble texture on the palate.

Nearly 150 acres of vines averaging 30 years in age.
50% Xarel.lo, 30% Macabeo and 20% Parellada.
Harvest between the end of September and the beginning of October. Average yields of 4.4 tons/acre.
The different varieties were all harvested and pressed separately. Only the must from the first light pressing was used for the base. Secondary fermentation took place in bottle, with a minimum of 20 months aging on the lees (the minimum required by law is just 9 months!). Disgorged using a process ("natural disgorgement") in which the neck of the bottle was not frozen to remove the accumulated yeast/sediment. No dosage was added after disgorgement, hence the name "Brut Nature".
