Muscat de Rivesaltes (Dancing Couple) NV
The cooperative winery in Cases de Pene has produced the Cuvée de Peña Rouge, which is blended by HPS, for more than 20 years. Under the Château de Pena label, they also make a fantastic Côtes du Roussillon Villages red, and a number of Muscats and other sweet wines, for which the Rivesaltes region of the Roussillon is renowned.
Tasting Notes: This classic Muscat de Rivesaltes offers a characteristic nose of orange rind, exotic fruit and light floral notes. Full and round on the palate, it is well-balanced, with a sweetness that is not cloying.
Serve With: Great as an aperitif or paired with spicy appetizers such as samosas or fried jalapenos.
Vineyards
Nearly 1,000 acres total; 400 acres red varietals: Syrah, Carignan, Grenache, Merlot and Cabernet; 12 acres Chardonnay and Viognier; 370 acres Muscat d'Alexandrie and Muscat à Petits Grains; also Grenache Blanc, Grenache Gris and Macabeo for Rivesaltes sweet wines.

Viticulture
Yields of 2 tons/acre.
Vinification
Fermented until the residual sugar comes down to 11% (with about 8% alcohol), and then fortified to 15.5% alcohol and blended with the wine from the previous vintage. Bottled before the next harvest.
