- From 30+ year old Grenache, 50+ year old Carignan, and 20+ year old Syrah vines grown in La Clape, Haut Corbières and Roussillon. Clay/limestone soils with some lacustre, éclat, gypsum and sand.
- From the foothills of the Pyrenees on slopes “en coteaux.” Exposed south-southeast at an altitude of between 721 and 833 feet in IGP Pays d’Oc, Languedoc-Roussillon. Clay and lime stone soils.
- Vines range from 25-60 years old. Kimeridgian limestone clay.

- Certified Organic vineyard since 2014. Made with organic grapes. From old vines. Harvest by hand in cases.
- Rocky clay, sandstone/limestone terroir. Vines 10+ years old. 8 hectares/ton. Grapes are sustainably grown. Certified HVE3 (Haute valeur environmentale).
- Sustainable farming practices (in transition to Certified Organic). Dry-farmed vineyard. Pruned in goblet form. Harvested by hand and vinified separately from 3 separate parcels.

Product Wine Type
Product Winemaking
- This 100% Chenin has been aged on lees in tanks. During bottling, carbonic gas is introduced into the wine through an extremely fine membrane, until it has the same pressure as in traditional methods.
- Vinified together destemmed, extraction by pigeage in concrete tanks. Pre-fermentation maceration for the Syrah. Blended and aged in cement tanks on the fine lees. Unoaked.
- Directly pressed. Cold settled into tanks. Vinified and ages without sulfites on cold lees.
